If you have Overload.spmod, you can modify the deflection angle on the ailerons. If not, put the ailerons closer to the fuselage, make the ailerons smaller, or thinner, or all of the above.

You can do it slightly faster in DreamCarRacing 3D. It is a good game, according to me, ScrapMan, etc. The hard part? Integrating the suspension with the steering (yes, you make your own steering). I made a race car once, with an outdated version; transmission bars were removed three updates after my version. Because I "bought" the other DCR game, I got the Steam key for my version.
@Sauce A chine is an aerodynamic feature involving sharp edges on the sides that go along the fuselage. Chines are the mini-wing-like extensions you see on the SR-71 Blackbird. In the fighter's case, it is the sharp edges. In either case, they provide minimal lift and moderate stability.

Necessarily doesn't help if your plane blows up half the time when firing. It may be better, but it's less reliable.

@mikoyanster I managed to fix some disastrous problems.
Pitching down explodes the plane - I set the tailplane to allow clipping.
Rolling tears the wing apart - I slowed down the roll rate.
Pitching excessively tears the plane apart - I slowed the pitch rate.
