you're using overload too much and too fast in one single session of designing
load into the sandbox, quit, and enter the overload menu again

it's lag caused by your phone not being strong enough

if you don't put a vertical stabilizer, it doesn't have a way to stabilize itself in the yaw so it just veers off
tbh it depends on the selling point and how "interesting" it looks on first sight
you can just put a hidden vertical stabilizer
or
if you're crazy, you can use some other measures I won't mention
