I had this issue about a year ago, and I found that for some reason, when I place a part, it nudges it to the left or right by .000000003 or so units. It might not seem like much but that minuscule imbalance enough to make an aircraft auto-roll.
Solution: Use overload to make sure all the center-aligned pieces are in the exact x-coordinate, and most importantly the cockpit piece
the physics model in this game is pretty weird, but Ive gotten used to copy and pasting really small numbers into the Overload coordinates window.
In addition Yeager is the only airport with roughly FAA compliant runway/ taxiway markings. I mean i get it this is a sandbox game, but proper markings would be very nice.

word of advice, in the future it might be better to use VTOL nozzles attached to rotators. It results in a much lower profile.

It runs SP very well with juicy framerates on high physics across the board
