Well done! I copied the detacher and projectile from inside the magnet to compare (and do away with any possible mods on the second - control - projectile and detacher)... and it works! It seems like it needs to full detacher force to get going but all good.
Flight model - a couple of quick observations - COT is above COM which is causing the downward pitch (I added some weight to align it and solved it) and the control surfaces for pitch are too large which is causing the bobbing - either reduce them or move the CoM forward or backwards (need to find that sweet spot!)

This certainly looks great! Probably needs some work on the flying - which can be tricky sometimes. A couple of tips... try not to add dead weight to balance it, better to move wings or mod parts to 0 mass. Move the rear landing gear to just behind the red line for an easy take off. The all moving tail looks great, however its a huge surface and can be tricky to get to work right... but all good, love the plane!!!
