I've played with USA, UK and Germany quite a lot and Germany was by far the best for boom n' zoom in my opinion. Don't go with Japan; if someone so much as sneezes in your direction you'll probably catch fire.

I personally started with Britain, since most of their aircraft are pretty solid all-rounders. however, i found that the climbing performance of early spitfires was pretty bad.
You can go with Japan if you want great turning performance, but they are pretty slow and you will burst into flames if someone sneezes at you.

I don't know what to say about France and Italy... i don't even know anyone who uses them.
