Making each wing out of 2-3 wing parts can help. Also, if you make basic fuselage wings you can connect the engines to the fuselage wings instead of directly to the wing parts.

I think you’ve discovered the pain of the mirror tool… When you mirror any group of parts that’s supposed to move, you usually have to go back and check all the connections because the game will add all kinds of random connections that will prevent stuff from moving.
And also, making a manually controlled VTOL aircraft is quite hard, so I’d recommend adding a gyro to stabilize the plane while in VTOL mode
I’m impressed with your creativity in using inlet parts to add color detail. Great job!
