to get the different names, go into the XML editor, go to the "Missile" tab, press the little + button to add a parameter, in the first field write name, in the second simply write the name you want to be shown
for custom missiles, there are a handful of tutorials out there, but you basically have to do something like this:
1. get out the missile, a pylon, a detacher, and the starting point of the body
2. attach missile to the bottom part of detacher
3. attach body to the back of the detacher
4. attach top of the detacher to the pylon
5. start building the body itself from the attached body section, if you are using fuselage pieces simply use the "add section" button, make sure you are using either structural panels or fuselages if you're making any fins for the missile
6. make sure all parts of the body have no mass, no drag (including calculateDrag off), and disabled collisions
7. once you are fully done with the body, simply copy the missile's coordinates (X,Y,Z) into the front of the body (make sure it's on "connected parts" so that all pieces move with it) and then move it freely along the Z axis so that the missile is hidden inside the body or is integrated with it
i decided to try my hand at this too (already did it a few times before) and decided to go with Koenigsegg Agera RS (i didn't want to get traumatized by using the Jesko so i just went with the predecessor lol) and the results were this
i gotta say, a lot of them look fine (though in many of them it seems to cover the headlights with a plastic garbage bag), though top right looks like some hot wheels car and mid right is just what. bottom left and top middle are probably the best ones tbh
top left: yup thats my sleep paralysis demon alright
top middle: the one on the top looks decent albeit a little stubby/Harrier-like, but i think it tried to draw that russian okhotnik drone thing on the bottom but had a stroke half way through
top right: decent, though it looks like someone bit into it several times
mid left: wings went adios, control surfaces became chonk, and it has a massive tumour on the right side
mid mid: top one looks like a mildly corrupted N64 mesh of it, bottom is just what
mid right: CRONCH CRONCH I'M VERY HUNGRY
bottom left: once again, okhotnik+F-22+stroke
bottom middle: wings went adios, but actually the best/most accurate looking one aside from that
bottom right: 5 year old kids taking a detailed F-22 replica and adding 8 kajillion wings and weapons to it
i have a very similar problem, i tried making a custom missile after not doing one for a while and it also starts randomly spinning and going in spirals, though the difference is that mine is an air-to air, but still, our issue is virtually identical
mostly because it's kind of a paneled mess, i absolutely hate going down to like 0.1cm fuselages so i use larger pieces instead and work around the size issue with slicing, rotating and other stuff

you can use the {} brackets to display an aircraft parameter
example: {TAS*3.6} will display your true airspeed in kilometers per hour, as all 3 of the input units (IAS, TAS, GS) measure in m/s, which can then be multiplied by a specific number (3.6 in the case of kmh) to get other units
there are of course other parameters, not just speed, such as Altitude, VerticalG, AngleOfAttack, etc.
i honestly thought that the low part count would be because i thought you used props for the blades, but turns out its a mod lol
then again theres far more than 16 rows of blades + the actual cowling itself
funky trees (abbreviated "FT") is basically a built-in programming language of the game, allowing for much more complex inputs, it's a little bit complicated but there are some simple things in it too
for example, previously you had to use 2 rotators to make a control surface rotate with both pitch and roll, but now you can use Pitch+Roll on just one rotator
to access funky trees, you first need to use the game's built-in XML editor, and edit the input to one of the FT inputs, such as Pitch+Roll mentioned above; in the normal part property menu the input will now change to "Funky" and you can simply click on it to edit it that way too once you've already done it with the XML method

i did manage to find a guy who had the same points as me in the pic, so thats good enough for me
though personally i think i'm in the range of where the ends of the "i upgraded the performance" and "i applied analysis results" arrows end, however i am not in the "i put in a lot of effort" stage since i simply lack basic mathematical knowledge and skills (for FT), which is needed to reach that point and beyond it
